Mantuan salami with garlic

Our salami is made exclusively from national pork. The raw material is sectioned, ground, kneaded, seasoned, stuffed into soft gut or sow's tail. The product is pierced, tied and taken to the drying cell. After a few days it goes into the seasoning cell where it remains for at least two or three months before being sold.
